The moulder is especially suitable for french "baguettes" and long loaves, from 100 to 1300 gr. The dough is enlongated between 2 woollen belts moving in opposite directions and at different speeds. The setting of the rollers and belts are adjusted on a graded scale to memorize easily the different treatments. The moulder can be combined with the pre-fermentation unit.
